Description

The new mobile O2-instrument Oxytrans M measures continuously and exactly the content of oxygen in liquids and gases. The sensor is especially designed for breweries and further applications with high requirements, e.g. power plants or bioreactors. The optical principle of measurement is based on the effect of dynamic luminescence quenching by molecular oxygen. The indicator layer on the glass installed in the measuring head is illuminated with a blue-green-light. With this, the indicator molecules are transferred into an excited state and emit a red light and detected by the internal detector. If oxygen is in the medium, this luminescence effect is prevented by energy transfer to the oxygen molecule. After the collision with the indicator molecule the oxygen molecule is transferred from its ground state (triplet state) to its excited singlet state. As a result, the indicator molecule does not emit luminescence and the measurable luminescence signal decreases linear to existing oxygen concentration. This decreasement is the basis for the oxygen calculation. The O2-concentration can be displayed in different units like ppb, ppm, %oxygen, etc.

Description

Before the fermentation a 2-component-system is existing consisting of extract and water. The concentration of this system can be achieved by defining a physical property, like the density or the sound velocity of the medium. After the fermentation alcohol is added as a third component. Now a 3-component-mixture consisting of extract, alcohol and water is generated. Therefore 2 physical quantities, independent of each other, must be determined in theory. That is a combination of density and sound velocity measurement. Due to a special feature of the quantity „sound velocity" the original wort of beer can also be determined with only this single quantity sound velocity as well. This can be explained by the increase of the sound velocity through the arising alcohol during fermentation, which is nearly 1:1 compensated by the reduced (fermented) extract. As it is generally known during the fermentation two parts extract are transformed into approximately one part alcohol. This virtually leads only to an insignificant increase of the sound velocity value during fermentation. For example an original wort value of 12 °oPlato before the fermentation climbs on merely 13,5 °Plato at a degree of fermentation of 80 %. This small difference allows the practical use of the Sonatec sound velocity sensor for the determination of the original wort without the need to determine extract and alcohol in a separated way. The possible repeatability of +/-0.05 °Plato is in this case directly depending on the variations in the brewing-process, that is mainly the variation in the degree of fermentation and CO2-content. If these influences have to be compensated and/or to improve the accuracy up to +/- 0.03 g/l, the Platomonitor has to be expanded to a Beermonitor with an additional density sensor Rhotec. Through that the degree of fermentation becomes exactly calculable by determining the alcohol and the remaining extract precisely. The CO2-value in this case has to be kept better than +/-0.2 g/l or has to be measured for compensation with an additional CO2-sensor Carbotec.

Before the fermentation a 2-component-system is existing consisting of extract and water. The concentration of this system can be determined by definition of a physical property, like density or sound velocity. After the fermentation alcohol is added as a third component. Due to this a 3-component-mixture occurred after completed fermentation consisting of remaining extract (the degree of fermentation is approx. 80 %), alcohol and water. With the continuous measurement signals of density and sound velocity of the two sensors Rhotec and Sonatec in combination the alcohol and extract concentration can be precisely determined. From these measured values of alcohol and remaining extract the concentration of the Original Wort can be precisely calculated with the Balling-formula. Because the extract composition of the beer varies, the gradient of the extract curve is different unlike the exactly defined alcohol curve. With a product specific calibration this extract dependency can be compensated. For reaching the mentioned repeatability of the measured values the CO2 concentration has to be kept better than +/-0,2 g/l or has to be determined separately for necessary compensation with an additional CO2 sensor Carbotec.

Description


The Carbotec TR-PT in-line CO2-transmitter measures continuously and exactly the content of carbon dioxide in carbonated liquids. For determining the CO2-content of a carbonated liquid, every 13 seconds a 30ml sample is isolated from the main stream. The pressure of this taken sample is abruptly reduced to below atmospheric pressure. The resultant pressure will differ from that of a non-carbonated liquid according to the volume of dissolved CO2 in the sampled liquid. This difference in resulting pressure is the basis for calculating the CO2-content of the liquid. The temperature dependence of the measurement signal is electronically compensated by PT100. After the measurement the sample is returned to the beverage line. The CO2-concentration can be displayed in different units like g/l, v/v, bar (20°C), ml/l, % or cc/kg. The menu-driven software includes the product-specific calibration and product selection. Analogue and digital in- and outputs onboard can be used for process controlling and automation. The sensor has a hygienic construction and is cleanable with all in food- and beverage industry typical CIP-media.

Description


The Sonatec Ultrasonic Concentration Sensor is a highly precise means of determining the sound velocity of liquids. Like density measurements, sound velocity is a material and concentration dependent quantity which can be used for determining the concentration of a liquid. The propagation time of a piezo-ceramic generated sound pulse is measured between the prongs of a fork-shaped measuring head installed directly in the process. As this propagation time changes, the sound velocity and resulting concentration changes are measured. The temperature dependence of the sound velocity measurement is compensated through the electronic measurement of parallel PT1000 temperature elements. From these measurement signals, calculated concentrations are obtained and displayed in Mass%, Volume%, °Brix, %Extract or other sound velocity calculable quantities of the measured medium. Due to the simple mechanical design without any movable parts, the sensor is very reliable and virtually maintenance free. The use of this technology with specific measurement software has a proven track record for liquids with dissolved and un-dissolved components, both organic and inorganic.
